In this episode we’ll discuss:
- what influenced Fox to become a chef;
- the importance paying attention to detail;
- how mastering the little things pays off over time with the compounding effect; how a constant drive for perfection can be just as much as a weakness as it can be a strength;
- and how to use instagram to collect feedback
Chef Jeremy Fox got his start working back-of-house in southern restaurants at the age of 17. He would go on to stage in Europe at three Michelin Star properties, then he found himself back in the states, but this time on the West Coast, in California’s Bay Area. He fine-tuned his skills at Manresa, Rubicon, and Charles Nob Hill before landing the executive Chef position at Ubuntu, in Napa, CA. Under Fox’s tenure, Ubuntu was awarded a Michelin Star.
In addition, Fox has garnered accolades including food and wine “Best New Chef 2008” and San Francisoco Chronicle “Rising Star Chef 2008”. In 2013 he joined friends Josh Loeb and Zoe Nathan at Rustic Canyon Wine Bar and Seasonal Kitchen, and this is where you can find him today.

Success or Leadership Quote/Mantra
Never be satisfied, always try to improve.
What is your “why”?
Making people happy.
“It” Factor
- Hard work
- Not being afraid to get his ass kicked
- Attention to detail
Industry Challenge or Failure
- Chef’s strength of always striving to be a little better, is also his weakness. Never being satisfied can lead you to become insatiable. Insatiable people are not easy to work with and can tend to be self absorbed.
- Chef Fox has learned to trust the opinions of others, and to be more “we” focused instead of “me” focused.
Knowledge BOMBS
Employee Hiring
- Try to convince people they do not want to take the job. If they show up and insist on working for you, it shows how much they want it.
- It is also a great way to build trust. If you’re honest and straight forward from the beginning, you will develop trust and rapport with your people.
Employee Retainment
- Create a culture where people can learn.
- Allow people to express themselves through the food.
Industry Resource
Big Night (This is the movie Chef recommend early in the interview)
Advice on Marketing
- Don’t use social media to broadcast. use it to listen.
- Chef uses instagram to see how people react to his food.
Best Business Advice
- Be humble. Be able to control your message.
